Starting my day off right means fueling my body with nutritious goodness. I know how easy it can be neglecting to eat healthily; life happens, and there always seems to be a million things that need to be done, but trust me on this - it’s well worth it! Studies suggest that eating ahealthy breakfast may help combat obesity and diabetes in addition to increasingcognitive function, and energy levels.
My busy schedule requires me to fix meals that are quick and easy. After plenty of research and playing around in my kitchen, I’ve managed to master making those meals nutritious and delicious! Below is a recipe for quick and easy pancakes (yes, I said pancakes!) that contain all the essential nutrients you’ll need to kickstart the day. Whether I’m in the mood to enjoy a nice and languorous brunch or I’m halfway out of the door with only 5 minutes to spare, they’ve become a staple for me on weekends and weekdays alike!
The Easiest {and Most Delicious} 3 Ingredient Pancakes
Prep Time: 2 Minutes
Ingredients:
- 1 Egg
- 1 Ripe Banana
- Blueberries (Or any fruit topping!)
- 1 tsp coconut oil (really any oil will do!)
Directions:
- Mix together 1 egg and 1 ripe banana in a bowl. Don’t mix too much; you want to keep some texture to it so it makes flipping easier!
- Using a flat pan, coat the bottom with oil.
- On medium heat, add mixture to pan in small round pancake shapes. Once you start seeing the pancakes bubble on top, flip the pancakes.
- And voilà! The easiest and quite possibly the healthiest pancakes you will ever have!
